Lunch in a snap
Popping my feet up midway through prepping for Soup Social tomorrow. Need a quick lunch - so I'm revisiting one of my all time favs. Packed with good protein, quick and crazy good.
1 Avacado - mashed and add lemon juice, pinch of sea salt, glug of olive oil. Taste to make sure the lemon and salt pop.
A nice dollop on each toast slice, drizzle olive oil, sprinkle chopped cilantro.
FYI - be sure to have a little something sweet for afterwards! Dark chocolate hazlenuts for me.
